Parson’s Pop-Up at CAA

In 2020 the Parson’s patio popped up indoors at the Chicago Athletic Association Hotel. Executive Chef and Managing Partner Hunter Moore brought all the hits downtown for the pop-up — chicken sandwiches and nuggets (all available regular, and hot), fish sandwiches, hush puppies, and more.

Beverage Director and Managing Partner Charlie Schott stocked the bar with all the favorites: Parson’s Beer, Negroni Slushies, Red Skeleton slushies, hot cider with Jim Beam, Jim Beam Highballs, picklebacks, and Parson’s Housemade Pickle Soda.

 
 
 

The Parson’s crew also brought the whole patio vibe to the Chicago Athletic Association’s Tank space (formerly the hotel’s pool!), including ping pong, bags, patio party vibes (of course), a bunch of twinkling lights...

and all those red and white signature umbrellas. There was programming multiple times a week as well, including DJ Jill Hopkins, The Hoyle Brothers, Twin Peaks DJ sets, Karaoke, Charity Bingo benefiting the Shedd Aquarium and more.
